2 tbsp butter
2 tbsp all-purpose flour
1/4 tsp salt
dash of cayenne pepper
1/4 tsp ground mustard
1 cup milk
cooking spray
1/2 cup cheddar cheese
1/2 head of cauliflower, cut up
1/4 cup of water
- preheat oven to 425 F
- spray casserole dish and cover bottom with cauliflower then add water
- in a saucepan over low heat, melt butter
- stir flour, salt, cayenne pepper, and ground mustard into butter over medium heat until smooth and bubbly
- remove sauce from heat and gradually stir in milk
- return sauce to heat and boil for one minute, stirring continuously
- removed from heat and add cheese, stirring until melted
- pour sauce over cauliflower
- baked covered in oven for 15 minutes or until cauliflower is cooked.
I've put leftover roast beef on the bottom of the casserole dish to add some protein and it comes out quite good!
