Berry Pie
Pastry for a two-crust pie
1 cup sugar
1/2 cups all-purpose flour
1/2 teaspoons ground cinnamon
6 cups of mixed berries (blackberry, raspberry, blueberry)
1 tablespoon butter
1. Preheat oven to 425 F.
2. In a large bowl, mix sugar, flour and cinnamon.
3. Gently stir in berries.
4. Pour into a pastry-lined pie plate.
5. OPTIONAL: sprinkle extra sugar over mixture.
6. Cut butter into pieces and sprinkle over berries.
7. Cover with top pastry.
8. Slit top pastry in several locations.
9. Seal top pastry with bottom pastry.
10. Cover edge with a strip of aluminum foil.
11. Bake for 30 minutes.
12. Remove foil and bake an additional 15 minutes.
13. Remove from oven when crust is golden brown and juice is bubbling through slits.
14. Cool for two hours.
